Spicy Sausage and Gravy Over Biscuits


I really like sausage and get jealous when we attend an event like Easter brunch or something and people are eating sausage and gravy over biscuits! David on the other hand is not a fan and hates it when I make it. He is usually raiding the pantry after the meal because he is still hungry but not interested in more sausage and gravy. Knowing the ingredients that make up this meal, you wouldn't think it's a meal I could eat, but with the right ingredients its easy to make this dish! This recipe uses spicy sausage because I accidentally bought spicy versus mild at the store the other day. Make sure you are picking out a sausage that is gluten, soy and MSG free. I used Market Pantry brand from Target. Also, did you know that dairy milk contains more sugar than almond milk? Oliver's whole milk says 12 grams of sugar while my almond milk says 7 grams per serving. Because of this difference, a little sugar is added to make it taste similar to real milk. If you are able to use real milk, skip the added sugar. I had some leftover Schar bread in the freezer so I used that for my "biscuits" but any allergy free toasted bread will do.

Spicy Sausage and Gravy Over Biscuits
Serves 6

-12 slices of Schar white bread from the mix or pre-made if you can tolerate soy or a bread that meets your allergy needs
-1 lb. ground spicy sausage (or mild but salt and sugar may need to be altered)
-1/3 cup brown rice or corn flour
-4 cups almond milk
-1 1/4 teaspoons sugar
-2 1/2 teaspoons salt
-1/8 teaspoon black pepper

Directions: Prepare Schar white bread mix in a loaf per package directions and slice once cooled. In a skillet, cook ground spicy sausage over medium heat until well done and juices run clear. Drain fat. Coat sausage in brown rice flour until sausage is evenly coated. Once coated, slowly mix in the almond milk, sugar, salt and pepper. Cook over a medium heat, stirring frequently, until sausage gravy thickens. Once mixture thickens to the desired thickness (I like ours a little runny because gluten free bread can be dry.) remove from heat and serve over bread.
