My favorite sandwich at Arby's was their beef and cheddar on an onion bun. Before my allergies I would make them at home and even now I make them but just have to settle for a different bread. Since I made hot pockets last night I had some Schar bread mix leftover and used it to make a small loaf of bread. Today I used some of that bread to make Beef and Cheddar sandwiches. The sauce isn't a perfect Arby's sauce but it comes close enough for us. We had these for lunch today with veggie straws and clementines.
Beef and Cheddar Sandwiches
Makes 4 sandwiches
-8 slices of Schar white bread (From the mix unless you can have soy, then you could use their pre-made loaf or Ciabatta rolls instead if desired.)
-1 package (about 7 oz) Land O Frost premium roast beef
-1 package (about 7 oz) Land O Frost premium roast beef
-8 slices of Daiya cheddar cheese slices
-Soy Free Earth Balance butter spread
Directions: Butter one side of each slice of bread. Place bread butter side down in a skillet. Place half a slice of cheese on bread followed by 1/4 of the package of roast beef. Top roast beef with another half slice of cheese and another slice of bread with butter side up. Cook until bread has browned. Flip sandwich over and brown the other side. Once both sides are brown and cheese is melted, remove and place on a plate. Spread a small amount of French dressing underneath one piece of bread on each sandwich. Return the piece of bread to the top of each sandwich and serve.
