Gluten Free Pancake and Baking Mix by Bisquick:
I got this pancake mix at a local grocery store for $4.39
I followed the back of the box directions that included the following ingredients: 1 cup pancake mix, 1 cup milk (I used soy vanilla by Silk), 2 tbsp vegetable oil, 1 egg (I made an egg using Ener-G Egg Replacer).
I was surprised how good these gluten free pancakes tasted! They weren't as fluffy as regular pancakes (probably because of the lack of egg) but they were still very good! The back of the box also has recipes for waffles and biscuits. I'm excited to try biscuits next because I like sausage and gravy over biscuits.
