As promised here is my first dinner to post. Tonight we had "cheese" burgers with fries and fruit for dinner. I know you are all thinking of a big juicy burger with all the toppings sitting on a beautiful bun! Not quite in gluten free land but our version was tasty. Usually I make a loaf of allergy friendly bread but I just didn't have time today so I made a "taco" version instead that turned out pretty good. We paired these with some blueberries, cantaloupe, and French fries. Did you know that some frozen fries contain gluten and almost all contain soy!? It has been an interesting challenge trying to find soy free frozen fries but Alexia brand fries (not all of their flavors/styles though) have my back! We used their crinkle cut variety tonight!
"Cheese" Burger Tacos
-1 package Jennie-O Turkey Burgers (4ct/16 oz)
-1 bag shredded lettuce or cut your own
-1 tomato, diced
-1 package (8oz) Daiya pepper jack style cheese shreds
-8 corn tortillas (be careful to read the label)
-Soy free Earth Balance butter spread

Cook burgers to the temperature directed on the package either on the grill or stove top. Cut each burger patty in half. "Butter" one side of each of the corn tortillas, top with some "cheese" and place butter side down in the frying pan. Fry till brown. You could just microwave the tortillas in a wet towel but they get soggy and flimsy. I prefer mine more crisp. Take your fried tortillas with melted cheese on them, place half a burger inside along with some lettuce and tomato. Fold the tortilla in half and you've got your burger...err I mean taco burger!
